If it moves it costs. If you remember that in the Food Truck Business then you will not go wrong. The 40 Food Trucks of Matilda’s we operated in Sydney till we sold to Spotless Catering in Melbourne were each a little business.

I set up a small restaurant, two in fact. I built a canteen with seating off site and then had it craned into the Sydney Olympics Building site. I also built off-site a canteen for the Sydney Casino building site then I flat packed it and assembled it in the Underground Car Park of the Site.

Each was easier then running the Food Trucks.

By staff did not run a 3 tonne truck into a stationary car. My food did not overheat or overcook.

I did not have a hammer wielding opposition threaten my life. I could stock-take at anytime and I could audit the till at any time.

Setting up a run is not an easy process. You will need to time call and driving distance. You will need a run-book or GPS all set up. You will need a commercial kitchen and you will need drivers who can sell.

Food Trucks make money. Good money. But you have to be good, very good, and on the Ball at all times.

My advice. If you have the choice take the restaurant. You can always go into Food Trucks later.

But as in all things in life there is a Golden Rule of all Golden Rules.

Never go into business unless you know who and where your market is.
